Creamy Chicken Fajitas – Kate’s recipe of the week

I’ve been noticing the new Philadelphia Cooking Cremes in the grocery store for the past several weeks, so being the sucker that I am for new products, I picked up the little Cooking Creme Recipes pamphlet, found a promising recipe, and decided to give it a try. This week’s recipe, Creamy Chicken Fajitas, uses the Santa Fe Style Cooking Creme and is so easy to prepare and super delicious. Creamy Chicken Fajitas Ingredients: (makes 8 fajitas) 1 lb cooked chicken strips (or beef, if you prefer) 1 onion, sliced thinly 2 peppers, sliced thinly (I used green and orange) 1 tub Santa Fe Cooking Creme 8 flour fajita size tortillas 1 cup shredded cheese (Oops, I left the cheese out of the photo) Directions:   How easy is that? The Santa Fe Cooking Creme mixed in with the chicken/veggie mixture adds …

Ooey, Gooey Marshmallow Crackers – Liz’s recipe

Have you ever noticed it’s the little things in life that make us feel like dancin’ a little jig? Such is the case with today’s recipe. Please grab smelling salts to help get over the shock of me, Liz, giving you a recipe, and continue on to the bestest afternoon snack the world has known. More April Fools’ Day Food Pranks – Kate’s Escapades

In my humble opinion, April Fools’ Day is a highly under-appreciated and overlooked holiday. Years ago, during the beginning of my marriage and mommy-hood, I had many an April 1st prank pulled on me by my husband and kiddies. After several years of taking it all in stride, I decided it was time to strike back at the clever culprits. That’s when I started ‘messing’ with their food. Not anything mean, like making the food … Read entire article »

Homemade Instant Oatmeal Packets – Kate’s Escapades

A few days ago I bought a 42 oz. container of Quick-1 Minute Oatmeal on sale for $1.88. I figured it would be much cheaper than buying the instant oatmeal packets that my family is used to. The problem? My family expects things to be fast and easy. If all they have to do is empty a packet of oatmeal into a bowl, add water and pop it into the microwave for a minute or two, well, that’s doable. However, if the process involves opening an oatmeal tub, using measuring cups of TWO different sizes, adding sugar, salt, cinnamon, water…and then putting it all back away, whoa, way too many steps here. Plus, my kids don’t really like the texture of ‘real‘ oatmeal. Too oatmeal-y, they say. Not as smooth as the … Read entire article »

Great recipe! Here’s how I made it – Liz’s rant

I realize this is probably quite petty, but as I’ve become a regular recipe hunter, there’s something that absolutely irks me to no end. To what do I refer? Five star recipes with comments that totally alter the recipe from its original state. How can you rave over a recipe that you’ve drastically changed? More important – why do you insist on throwing me off? You leave me wondering who to trust: the original recipe submitter or the commenting critics? This has become such a thorn in my side that I thought I’d peruse my recipe box on a certain recipe site in search for at least one recipe that commenters hadn’t drastically changed. Just one. Here’s what I found: Comments on a 7-layer salad: This is an excellent recipe. Because the dressing is … Read entire article »

Kate’s Recipe of the Week – Waffle Iron Turtle Cookies

Waffle Iron Turtle Cookies? What in the world is a Waffle Iron Turtle Cookie? It’s exactly what it sounds like it is…a cookie that looks like a turtle, cooked on a waffle iron. Crazy, huh? Who knew you could make cookies on a waffle iron? Apparently my friend and neighbor Linda did. I found this recipe she submitted in our neighborhood cookbook. It sounds just kooky enough that I HAD to give it a try. Waffle Iron Turtle Cookies Ingredients: 2 squares unsweetened chocolate (2 ounces) 2 eggs 1 cup flour 1/4 tsp. salt 1/2 cup butter or margarine (1 cube) 3/4 cup sugar 1 tsp. vanilla melted peanut butter chips (or chocolate chips or whatever other kind you fancy) Directions: In a pan, melt chocolate squares and butter over low heat, stirring constantly. In a separate bowl, beat eggs and then stir … Read entire article »
