Creamy Chicken Fajitas – Kate’s recipe of the week

I’ve been noticing the new Philadelphia Cooking Cremes in the grocery store for the past several weeks, so being the sucker that I am for new products, I picked up the little Cooking Creme Recipes pamphlet, found a promising recipe, and decided to give it a try. This week’s recipe, Creamy Chicken Fajitas, uses the Santa Fe Style Cooking Creme and is so easy to prepare and super delicious. Tex Mex Turkey Burgers – Kate’s Recipe of the Week

This week’s recipe is a nice change from the standard burger. Tex Mex Turkey Burgers are easy to make, taste delicious, and have just the right amount of Southwestern flair. Tex Mex Turkey Burgers Ingredients: (4 servings) 1 1/4 lbs. ground turkey 1 package taco seasoning 1 tbs. dried cilantro flakes 4 cheese slices 1/2 cup light sour cream 1/2 cup salsa hamburger buns lettuce (Oops! I left the lettuce out of the picture.) Directions:   1.In a large bowl, combine turkey, taco seasoning, and cilantro. Shape into 4 patties. 2. Cook the turkey patties. Homemade Instant Oatmeal Packets – Kate’s Escapades

A few days ago I bought a 42 oz. container of Quick-1 Minute Oatmeal on sale for $1.88. I figured it would be much cheaper than buying the instant oatmeal packets that my family is used to. The problem? My family expects things to be fast and easy. If all they have to do is empty a packet of oatmeal into a bowl, add water and pop it into the microwave for a minute or two, well, that’s doable. However, if the process involves opening an oatmeal tub, using measuring cups of TWO different sizes, adding sugar, salt, cinnamon, water…and then putting it all back away, whoa, way too many steps here. I realize this is probably quite petty, but as I’ve become a regular recipe hunter, there’s something that absolutely irks me to no end. To what do I refer? Five star recipes with comments that totally alter the recipe from its original state. How can you rave over a recipe that you’ve drastically changed? Pina Colada Cupcakes – Kate’s Recipe of the Week

We’ve been on quite a cupcake kick at our house lately. Last week I shared the recipe for Oreo Cupcakes. The week before that, the recipe for Churro Cupcakes. Today, I’ve got a tropical treat for you…Pina Colada cupcakes. Super easy, super yummy and one of our family favorites. Pina Colada Cupcakes Cupcake Ingredients: 1 box yellow cake mix 3 eggs 2 tsp coconut extract 1/2 cup buttermilk 1 small can crushed pineapple Directions: Mix together cake mix, eggs, coconut extract, buttermilk and pineapple with juice. Who doesn’t love the deliciousness of Oreos? And what’s more yummy than a cupcake? How about mixing the two  together to make one scrumptious treat…Oreo Cupcakes. Here’s the recipe. Oreo Cupcakes Cupcake ingredients: 1 box chocolate cake mix 1 cup sour cream 1 tsp. vanilla 3 eggs 18 – 24 whole Oreo cookies Directions: Mix together cake mix, sour cream, eggs, and vanilla. Place a spoonful of batter in bottom of paper liner. Place a  WHOLE Oreo on the spoonful of batter, lying flat. Fill with more batter until 3/4 full. Bake at 350 for 15 – 18 minutes. Cool completely.
