Easy Creamy Chicken Enchiladas – Kate’s recipe of the week

It’s the last day of school for the kiddies before summer break. Cooking dinner is the last thing on my mind today. We’ve got better things to do with our day, like maybe a few hours at the park topped off with a stop at Hawaiian Shave Ice downtown. Anyhoo, where was I? Waffle Iron Turtle Cookies? What in the world is a Waffle Iron Turtle Cookie? It’s exactly what it sounds like it is…a cookie that looks like a turtle, cooked on a waffle iron. Crazy, huh? Who knew you could make cookies on a waffle iron? Apparently my friend and neighbor Linda did. I found this recipe she submitted in our neighborhood cookbook. It sounds just kooky enough that I HAD to give it a try.
