Pomegranate Sherbet – Kate’s Recipe of the Week

Nothing says summer like a delicious bowl of  homemade ice cream. At our house we usually stick with strawberry or some variation of vanilla with a mix-in. Last week we decided to be adventurous and lighten things up with Pomegranate  Sherbet. It was super delicious and super easy. Ingredients: (makes 6 cups) 3 cups pomegranate juice (I used Old Orchard Pomegranate Cherry) pinch salt 1 cup heavy cream juice of 2 limes Directions: Mix pomegranate juice, cream, salt, and lime juice. Freeze in an ice cream maker according to your manufactures instructions. When your ice maker shuts off the sherbert will soft and fluffy and not quite frozen. Just put it in the freezer to firm completely. That’s it! The garden that didn’t grow – Liz’s rant

I am despondent. Totally, utterly despondent, I tell ya. Why? Because yesterday, I pulled up my three cucumber plants. Total summer yield: three cucumbers. Well, one was so large that I nicknamed it a zucchumber. I think it tipped the ruler at more than a foot in length. It doesn’t matter, though. I don’t grow them to break records. I grow them to pick when they’re approaching the perfect pickle cucumber size. Which is really tough to do when it doesn’t begin to ripen until it’s already a monster. So I’ll not even count the zucchumber. Meaning this gardening season has been an almost certain bust. No more visions of cucumber salads. Are any of you fans of QVC? (I know one reader who is… and you know who you are…) I am a huge fan. I especially like David Venable. He’s sort of like a big loveable Teddy bear – you can’t help but like him. At least I can’t. Anyway, I follow him on Twitter and have his app on my cell phone. Which is where his recipe comes in. Celebrate the 4th with Kate’s Patriotic Dessert

Celebrate Independence! With the 4th of July just around the corner, it’s time to start planning for the big day of celebration. There are parades to attend, fireworks to watch, picnics to plan, desserts to make. Here’s one that’s easy to make, looks and tastes delicious, and uses some of my favorite summer fruits – fresh strawberries and blueberries. I’m not sure how this happened, but apparently there’s a cool new shopping trend out here in Utah (and 14 other states) that seems to be all the rage, and I knew nothing about it! NOTHING! Not one thing! Nada! Thanks a lot, guys. I thought you were supposed to be taking care of me, you know, keeping me in the loop of all amazing new trends and finds. This cool new thing is called Bountiful Baskets . It’s a food co-op which uses it’s collective purchasing power to get fresh fruits and vegetables (and other assorted yummies) at great low prices, with the discounts being passed on to the co-op members (me…and soon hopefully you, too). Frozen Lemonade Pie – Kate’s Recipe of the Week

Today’s recipe is the perfect combination of a refreshing glass of lemonade mixed with a creamy cold slice of pie: Frozen Lemonade Pie! Four ingredients, five minutes of prep, some freezer time and you’ve got a delicious dessert. Frozen Lemonade Pie Ingredients: 1 pie crust (I used the shortbread kind, but the graham kind would be yummy as well.) 1 can sweetened condensed milk 1 can (6 oz.) frozen lemonade (I could only find a 12 oz. can so I used half of it and made the rest into lemonade.) 8 oz. whipped topping Directions: Mix everything together, put it into the pie crust and freeze for several hours. Festivals, food and fried Kool-Aid – Liz’s rave

I love festivals. And in the spring, summer and fall months, they abound all across the country. One of my favorites is the RC Cola and Moon Pie Festival in the railroad town of Bell Buckle, TN. Think of a Moon Pie flavor and they’ll likely have it. Of course they have other things, too. Like fried Twinkies and fried potatoes and fried Oreo’s and the list goes on. My hands-down favorite festival foods? One of those grease-laden corn dogs with mustard, washed down with a funnel cake. Elephant ears aren’t too bad either. I’ve been noticing the new Philadelphia Cooking Cremes in the grocery store for the past several weeks, so being the sucker that I am for new products, I picked up the little Cooking Creme Recipes pamphlet, found a promising recipe, and decided to give it a try. This week’s recipe, Creamy Chicken Fajitas, uses the Santa Fe Style Cooking Creme and is so easy to prepare and super delicious.
