Easy Creamy Chicken Enchiladas – Kate’s recipe of the week
It’s the last day of school for the kiddies before summer break. Cooking dinner is the last thing on my mind today. We’ve got better things to do with our day, like maybe a few hours at the park topped off with a stop at Hawaiian Shave Ice downtown. Anyhoo, where was I? Creamy Chicken Fajitas – Kate’s recipe of the week
I’ve been noticing the new Philadelphia Cooking Cremes in the grocery store for the past several weeks, so being the sucker that I am for new products, I picked up the little Cooking Creme Recipes pamphlet, found a promising recipe, and decided to give it a try. This week’s recipe, Creamy Chicken Fajitas, uses the Santa Fe Style Cooking Creme and is so easy to prepare and super delicious. Tex Mex Turkey Burgers – Kate’s Recipe of the Week
This week’s recipe is a nice change from the standard burger. Tex Mex Turkey Burgers are easy to make, taste delicious, and have just the right amount of Southwestern flair. Tex Mex Turkey Burgers Ingredients: (4 servings) 1 1/4 lbs. ground turkey 1 package taco seasoning 1 tbs. dried cilantro flakes 4 cheese slices 1/2 cup light sour cream 1/2 cup salsa hamburger buns lettuce (Oops! I left the lettuce out of the picture.) Directions: 1.In a large bowl, combine turkey, taco seasoning, and cilantro. Shape into 4 patties. 2. Cook the turkey patties. I know, I know. It’s something of a miraculous nature when I post a recipe, but this one is so easy, I couldn’t resist. This is another perfect dish for breakfast or brunch. And if you’re anything like Kate and I, chances are, you have breakfast for dinner once every week or so – and it’s perfect for that too! Now, on to the recipe! Bacon Cheesy Frittata: Ingredients: 6-8 eggs 1 pound cooked bacon, crumbled 1 c. milk 1 t. salt 1/2 t. pepper 2 T butter 1-2 cups shredded cheese Directions: Melt butter in baking dish Beat together eggs, milk, salt and pepper Pour egg mixture into baking dish Sprinkle bacon and cheese over eggs Bake at 350 degrees for 30-40 minutes, or until center is set.
