Recipe of the week: Cheater Black Beans and Rice

Here’s one of the easier cheater recipes I could imagine, born out of an “I’m starving and there’s nothing to eat” night. The best part of this is that all you need is a microwave. It’s a fairly light dish, loaded with fiber and filling. I’ve made it before in the summer months, adding fresh tomato salsa and some green onions, but never really looked at it for a good winter dish. But I think it works any time of year. I like nonsense, it wakes up the brain cells…and other things Dr. Seuss taught me about life. “Kid, you’ll move mountains!  Today is your day! Your mountain is waiting. So…get on your way!” – Dr. Seuss Today (March 2) is Dr. Seuss Day…a day celebrated in elementary schools all across this country. My own kids started off the day with Dad’s and Donuts before school. The object of this celebration is to see if  kids can drag their dads to school at the crack of dawn to eat a donut, and read a book, simultaneously, and preferably without getting the donut all over said book. This week’s recipe of the week is… Kentucky Hot Browns. Being two Kentucky girls, we think it’s high time we share this good old southern dish with the rest of the world. And true in Liz and Kate form, of course we had to figure out a cheater way to keep the same yummy flavor, while cutting the time and effort spent in the kitchen. Cheater Cinnamon Roll Apple Crisp

It’s Friday, so that must mean it’s Cheater Recipe time!!! This week Kate has a super yummy and super easy dessert for you…. Cheater Cinnamon Roll Apple Crisp m m m m Cheater Cinnamon Roll Apple Crisp Ingredients: 9 Rhodes Anytime Cinnamon Rolls 1 large can apple pie filling 3/4 cup brown sugar 3/4 cup chopped pecans 3/4 cup quick oats 1/4 cup flour 1/4 cup softened butter Directions: 1.  Preheat oven to  350°F. m m m m m 2.  Put cinnamon rolls in 3 rows of 3 in a sprayed 9 x 13 baking pan. m m m m m 3.  Spread apple pie filling evenly over cinnamon rolls. m m m m m m m 4.  In a bowl combine sugar, oats, pecans, flour, and butter. m m m m m 5. TGIF, dear readers! Liz here. Please try to overlook the fact that I’m in the kitchen, because I know that can be a frightful thought. Nevertheless, I thought I’d share this super easy recipe with you. It’s almost the equivalent of chicken soup – comfort food at its best, in my opinion. That said, I present: Cheater Chicken Casserole Ingredients: Pre-cooked chicken strips (check the package for number of servings – I typically buy one two-serving package because Colton is not adventurous when it comes to eating) 1 package frozen broccoli Velveeta cheese to taste A couple dabs of butter Butter cracker crumbs (Ritz, Club Crackers, etc – even saltines will work) Directions: Zap the broccoli in the microwave for 3-5 minutes to begin the cooking process. Liz’s rant: The healing power of soup

Every now and then, something happens to restore my faith in humanity. Prime example coming on the heels of my need for Mexican food at lunchtime, yesterday. Sometimes I like to get out, just me, myself and I, and have a quiet lunch. Maybe take a good book or whatever and just get away. So off I went to a neighborhood restaurant where I placed my order for a couple of tacos and waited on the chips and salsa. Liz’s rant: Please pass the plain pasta

Please understand that by plain, I don’t mean plain, plain, or sauceless plain. I mean stick to the plain shapes. Regular pasta, if you will – angel hair, elbow macaroni. Heck, I’ll even give you rotini every now and then. But when the shapes take on the form of SpongeBob or Spider Man, it seems a no-brainer that the world of culinary delights is gonna sacrifice flavor for the sake of novelty. Case in point would be Saturday’s dinner. My son requested mac and cheese, which I typically make from scratch. But for whatever reasons, (no elbow macaroni in the house…) I pulled out that instant version with the powdered cheese package (been there, done that?). Liz’s Rant: Cooking can be dangerous to your health

Preparations for dinner last week had started innocently enough. I’d made the decision to fix salmon patties. Which brings me to my first segue. Do people “fix” dinner or “make” dinner. It would seem that fixing dinner would imply something was broken. Ergo my latest kitchen rule: If it ain’t broke, don’t fix it. Back to the salmon patties. This is actually one of my favorite  – and fairly painful – things to fix. At least it was. My standard operating procedure includes mixing all the ingredients (including seasoned bread crumbs) about an hour before I’m ready to saute them. To the outside world (and by outside world, I mean anyone who has never lived with me long enough to see behind the facade) I’m sure I appear to have my act together.  My kids get to school on-time with matching clothes, combed hair and clean faces (usually).  I cook dinner most nights of the week. I play taxi driver, get the dishes done and sweep the floor every day.  I sign up to bring food to church socials.  I read my books for book club and I show up to appointments on time.  I don’t wear my pj’s to go shopping.
