Kate’s Recipe of the week – Crunchy Taco Chicken
Crunchy Taco Chicken is a fun and flavorful twist on the old standard baked chicken recipe. It’s super easy, has only 5 ingredients and takes only about 5 minutes of prep time. (Baking time is 45 minutes.) This chicken recipe is sure to please!
Crunchy Taco Chicken
Ingredients:
6 boneless chicken breasts
1 can cream of chicken soup
1 pkg. taco seasoning
1 1/2 cups corn chips, crushed ( I like to use Chili Cheese Fritos.)
1 1/2 cups shredded cheese, divided
Directions:
1. Arrange chicken in ungreased 9 x 13 baking pan, set aside.
2. Combine soup, one cup cheese and taco seasoning.
3. Spread over chicken and bake at 350 degrees for 45 minutes.
4. Sprinkle with crushed chips and remaining cheese. Return to oven and bake until cheese melts, about 5 minutes.

Why all the hate, amapola? Are you bored? Lonely? Hungry?? If you don’t want to eat it, don’t fix it! If you want it made without processed foods, adjust the recipe accordingly! It’s not rocket science, here! I’ve got a great recipe for making your own farmhouse cheese, and there are a plethora of grocers who offer organic, all-natural whatever-else-you-need to fix this dinner without having an outright SPELL! Now for the matter of corn. Sure it’s a grain! But we commonly refer to it as a – gasp – vegetable. So drop the holier-than-thou routine. Tomatoes are fruits. Yet I don’t put tomatoes on my fruit salad. You really need to lighten up.
For real, Amopola. What is the point of leaving a rude comment on someones blog? You don’t have anything better to do than spread your sad opinions on random peoples blogs. Go be a self righteous b*tch somwhere else.
What’s the deal, Amopola? Did someone piss in your cornflakes and make you eat them? If you don’t approve/like the recipe, fine, but don’t become the almight judge and jury for it. And even it it’s ‘sick’, as long as you don’t eat it 24/7 I’m sure you’ll be fine. Of course in your case it might be another story…..have a great day ‘sweetness’ – if that’s possible for you to do so……..

What’s not to love here? The meal appears to be delicious and I know Kate is a delightful, bright young woman. Too bad more people can’t be more like her!

I haven’t made this recipe yet, as I am waiting for my husband to come off the road first. But I gave the recipe to 2 of my 3 daughters and they and their families loved your recipe. They both appreciated how easy and fast it was, most of all they all loved the taste. Can’t wait to try it myself. I’m glad I stumbled on to this site.

wow, this looks yummy and something my whole family would eat. that’s rare. i will definately try this. for those who would want to try making their own taco seasoning so you don’t get cancer, lol, than you could try this recipe to keep in a jar handy for seasoning your meals.

I’m trying this recipe tonight. It is in the oven right now. It looks delicious and it is simple! That’s the best kind of recipe, if you ask me!
For the hater up there-
You can always make your own taco seasoning(not hard AT ALL) ise your choice of corn chips(organic or whatever the hippie shit is popular lately), use some organic cheese(or just raise a cow to create your own), kill the chicken you have been raising in your back yard, and get creative with that canned cream of chicken.
Boom!
