Recipe of the week – Chicken Pesto Club Sandwiches
It’s Thursday, so that means it’s once again cheater recipe time.
So what’s a “Cheater” recipe?
It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there.
This week’s cheater recipe…
Chicken Pesto Club Sandwiches
Ingredients: (per sandwich)
- 2 slices cooked bacon (You can use the fully cooked kind. I prefer to cook up a few pieces of turkey bacon in the microwave.)

- 2 slices sourdough bread
- 1 tbs prepared pesto
- grilled chicken breast strips
- 1 slice cheddar cheese
- 2 tomato slices
- 1/2 cup fresh baby spinach
(Oops! forgot the spinach in ingredients photo. )
- 1/2 tbs olive oil
*******************************************************************************************
Directions:
Spread pesto on bread slices.
Layer on chicken.
Add cheese, tomato, spinach, and bacon.Top with remaining bread slice.
Brush outsides of sandwich bread with oil. (Or you could spray with olive oil or butter flavored cooking spray.)
Cook on indoor grill 3-4 minutes or until bread is browned and cheese is melted.
That’s it! Easy as could be!

Pesto contains basin, Parmesan cheese, olive oil, pine nuts, walnuts,garlic, salt & pepper.Too many ingredients for me when I’m in a cheater recipe mode, However there is a good recipe at

Otherwise, I just buy a prepared bottle in the fresh veggie section at the grocery store. Happy eating.
