Cheater Molten Lava Cakes
It’s Friday, so that means it’s once again cheater recipe time. So what’s a “Cheater” recipe? It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there. Warning!!!
These Cheater Molten Lava Cakes
could be dangerously addicting.
Proceed with caution.
Cheater Molten Lava Cakes
Ingredients:
- 1/2 cup chocolate chips
- 1/2 cup butter or margarine
- 3 whole eggs and 3 egg yolks
- 1 box (1 lb 6.5 oz) Betty Crocker Original Supreme brownie mix (with chocolate syrup pouch) or 1 box (1 lb 6.5 oz) Betty Crocker Ultimate Fudge brownie mix (with chocolate syrup pouch)
Directions:
- Heat oven to 400. Grease 12 regular-size muffin cups with shortening or cooking spray. In medium microwavable bowl, microwave chocolate chips and butter uncovered on High 45 to 60 seconds or until melted and mixture can be stirred smooth.
- In large bowl, beat whole eggs and egg yolks until foamy. Reserve chocolate syrup pouch from brownie mix. Gradually beat sry brownie mix into egg mixture until well blended. Gently stir in melted chocolate chip mixture. Fill muffin cups 3/4 full of brownie mixture.
- Bake 11 to 14 minutes or until edges are set. DO NOT overbake: centers will be soft. (If you overbake you will lose the ooey gooey chocolatey lava center). Cool cakes in pan 2 minutes.
- Loosen each cupcake with knife; turn entire pan upside down onto heatproof tray or cookie sheet. To serve, place warm cupcakes in individual dessert plates and drizzle reserved chocolate syrup from brownie mix over tops. Makes 12.

My favorite dessert made easy. Unfortunately I can’t eat chocolate anymore.
