Liz’s last minute Easter eats

It may come as no surprise to find out that my original, outstanding Easter idea has gone the way of the dodo bird.  In theory it was quite a simple craft – peat pot Easter baskets.

Imagine the kitchen table, covered in 16 (count ‘em – 16) peat pots, a large jar of ModPodge, craft paint, stickers, pipe cleaners (the baskets needed handles), and glitter. But the stickers didn’t quite stick. And my enthusiasm waned faster than you can say spring sphere :-) .

So I punted.

What I discovered were some really great ideas from Kellogg’s. Who doesn’t love Rice Krispie Treats?? And who knew so many perfect Easter ideas could come from rice  cereal, marshmallows and butter?

Follow Kellogg’s original recipe for the treats first:

  • 3 T. butter
  • 4 cups miniature marshmallows OR 40 regular marshmallows
  • 6 cups Rice Krispies

1. In large saucepan melt chocolate morsels and butter over low heat. Add marshmallows and stir until completely melted. Remove from heat

2. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.

MICROWAVE DIRECTIONS:

In microwave-safe bowl heat chocolate morsels, butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 thru 4 above. Microwave cooking times may vary.

My favorite krispie design is the hidden surprise Easter egg treat, pictured above. In addition to the treats, you’ll need a plastic egg and some M&Ms or other candies. My own warning, here. Handling the Rice Krispie mixture is a lot like making popcorn balls – it’s going to be hot, so be careful. I find that buttering my hands (or spraying them with cooking spray) keeps the mixture from sticking to my hands.

If you don’t want to mess with the plastic egg, just mold your own egg, dip the bottom in some melted chocolate, then sprinkles.

This one is pretty cute too – a little bird’s nest, filled with candy. You’ll need a muffin tin, coconut and green food coloring, and jelly beans or other candy. Just mold the treats on the underside of the muffin tins (or inside them – either way, spray the tins with some cooking oil first). How cute is this?

Of course, no Easter is complete without our rabbit friends.  With that in mind, check out these chocolate bunny treats.  You’ll need three circle cookie cutters and the ability to shape cute little bunny ears, or a rabbit shaped cookie cutter, some icing and chocolate chips.

Needless to say, Kellogg’s has a ton of ideas for Easter and other holidays – a box or 10 of Rice Krispies and every holiday is easy to celebrate – even for me!
