Recipe of the week – Cheater Chicken Casserole
TGIF, dear readers! Liz here. Please try to overlook the fact that I’m in the kitchen, because I know that can be a frightful thought.
Nevertheless, I thought I’d share this super easy recipe with you. It’s almost the equivalent of chicken soup – comfort food at its best, in my opinion. That said, I present:
Cheater Chicken Casserole
Ingredients:
Pre-cooked chicken strips (check the package for number of servings – I typically buy one two-serving package because Colton is not
adventurous when it comes to eating)
1 package frozen broccoli
Velveeta cheese to taste
A couple dabs of butter
Butter cracker crumbs (Ritz, Club Crackers, etc – even saltines will work)
Directions:
Zap the broccoli in the microwave for 3-5 minutes to begin the cooking process. While it cooks, place chicken strips into a greased casserole dish (I usually cut the strips into smaller pieces, but it’s not necessary). Cut Velveeta into small chunks (I probably use about two inches from a 32 oz. brick). Add cheese to chicken. Then add broccoli (drain off any excess water) and the butter.
Toss the ingredients together and place in a 325 degree oven for about 15 minutes. Remove from oven and stir. Return to oven and bake another 10 minutes or so. Top with butter cracker crumbs and bake about five more minutes. And voila, dinner!
