Here’s a fun and easy twist on the old standby Sloppy Joe recipe that’s sure to be a hit with the kiddies and adults, alike. I’m betting it will also be a hit with the head chef in the house, because, like all of my recipes, these Corn Bread Sloppy Joes are super quick and easy to prepare.
Corn Bread Sloppy Joes
(The ingredients in the photo are doubled because I feed a small army at my house.)
1 package corn bread mix (81/2 oz.)
1/3 cup milk
2 lbs ground beef
1/2 up chopped onion
1 jar (26 oz.) spaghetti sauce
1 cup corn
1 can (4 oz.) chopped green chilies
2 packets Sloppy Joe seasoning mix
1 cup shredded cheddar cheese
Prepare and bake corn bread according to package directions, using the egg and milk.
In a large skillet, brown the ground beef and the onions. Drain.
Stir in spaghetti sauce, corn, chilies and sloppy joe mix. Bring to boil. Reduce heat and simmer uncovered for 10 minutes.
Cut corn bread into pieces and then cut each piece in half, lengthwise. Top with sloppy joe mixture and grated cheese.
