Kate’s Escapades – Independence Day Dessert

My family is having a picnic on Sat. to celebrate the 4th of July – a little break in the middle of the busy day to relax and have some fun with the extended family. You see, here in Utah County we take our Independence Day celebrations seriously, and we’ve been having a week long pre-party - everything from the hot air Balloon Fest to Art Shows to Soccer and Golf Tournaments – all leading up to the Big Day on Sat.
And then the real party begins on the 4th. There’s a 7 am Freedom Run (10k, 5k,or 1 mile), a Grand Parade at 9 (so popular that people sleep out over-night along the parade route just to insure themselves a prime spot), the Freedom Days Carnival to fill in the afternoon…and then the Big Event – The Stadium of Fire (a concert – Jonas Bros. & She-Daisy – and a fireworks show beyond belief).
The show is broadcast live to our troops stationed all around the world. Two of my daughters are dancing in the show this year as part of the 700 strong Stadium of Fire dance group.

Independence Day Dessert
Ingredients
store bought angel food cake cherry pie filling blueberry pie filling
2 small boxes of vanilla instant pudding 4 cups of milk whipped topping
Mix pudding according to directions and let set in fridge for 5 min. Cut angel food into bite-sized pieces. Put half of cake in bottom of clear glass bowl. Pour half of pudding over cake. Spread blueberry pie filling over pudding. Add other half of cake and pour rest of pudding. Spread cherry pie filling over pudding. Add whipped topping and you’re all set to go with a delicious, easy and pretty dessert.
