Kate’s Escapades: Fun Superbowl Snack Ideas

3 February 2010 2 Comments

Sunday is the big day football fans.

It’s once again Superbowl time, of course…Saints vs Colts.

(I’ll give you one guess as to who I am rooting for in the big match-up!)

I found two fun football recipes to keep the troops happy during the big game….

Football Cheeseball and Crackers & Chocolate Krispie Bites

Football Cheeseball and Crackers

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 pkg.  (8 oz.) KRAFT Shredded Sharp Cheddar Cheese
1/2 cup KRAFT Grated Parmesan Cheese
1/2 cup  MIRACLE WHIP Dressing
1/4 tsp. pepper
2   green onions, chopped
1 cup chopped PLANTERS Pecans
2 Tbsp.  pimiento strips
RITZ Crackers

Directions:

BEAT first 5 ingredients with mixer until blended. Stir in onions. Refrigerate several hours.

FORM into football shape; coat with nuts.

ADD pimientos for the lacing. Serve with crackers.

Chocolate Krispie Football Bites

6 squares BAKER’S Semi-Sweet Chocolate
1/2 cup  light corn syrup
1 Tbsp. butter or margarine
1/2 tsp.  vanilla
4 cups cocoa sweetened rice cereal
White decorating gel

Directions:

MICROWAVE chocolate, corn syrup and butter in large microwaveable bowl on HIGH 2-1/2 min., stirring after 1-1/2 min. Blend in vanilla.

ADD cereal; mix well. Cool 10 min. Shape into 18 (3-inch-long) football shapes with lightly moistened hands. Place on large sheet of wax paper; cool completely.

USE decorating gel to add “lacings” to “footballs.” Let stand until gel is firm.

We will be serving little pizzas.
2 lb brick of velveeta melted
1 roll of sausage (I use medium) browned
1 3-oz can of tomato paste
Mix everything together and spread on party rye bread.
Bake at 350 for 12 minutes.

That sounds delicious Kelly. I will have to give that a try, except I may have to switch out the rye bread for another kind. My kids won’t eat rye.
