This is my facebook status update from 11:27pm on Dec 20, 2010 (the eve of the last day of school before Christmas Break). “10 1/2 inches (according to my son’s ruler) and it’s still coming down. Liz’s rant: Holiday blues

Every year after Christmas, my mood really mellows. Once New Year’s Day is over, it tends to mellow more. This year, though, we have a double dose of melancholy in the family – especially where my daughter is concerned. Her fiance deployed overseas yesterday for what will likely be a seven-month tour.  Adam, who is a fantastic young man, is actively fighting to protect the freedoms you and I enjoy each and every day. There’s something very special about those men and women who sacrifice their daily lives – and sometimes, life itself – to fight for the United States of America. A few days ago one of my daughters noticed some bags of groceries on the counter and peeked inside and saw packages of chocolate chips and sweetened condensed milk. “Mom! Yay! You’re making fudge! Wait…it’s for your website, isn’t it? Thank goodness you have a website because that means I know we’ll have something good to eat at least once a week.” What?! Did she really say that? Liz’s rant: 15 pounds of carrots

That’s how it started. With 15 pounds of organic carrots, water bath canning equipment, cans, lids, rings and a book: Canning for Dummies. Except that Niki hadn’t cracked the book before arriving at my house.And I’d never canned carrots. (Insert large red flag, flapping in the breeze…) On the surface, the idea was a sheer stroke of genius. We’d get together before Christmas and can some very special homemade concoction, tying the jars with pretty ribbons and attaching homemade labels, wishing those lucky enough to receive such an inventive gift the merrriest of Christmases and most prosperous of new years. Kate’s Escapades – I’m a cotton-headed ninny-muggins.

Yep, that’s what I told myself over the weekend after I let my son convince me that we needed to try Buddy the Elf’s favorite delicacy, spaghetti with syrup. “We elves try to stick to the four main food groups: candy, candy canes, candy corns and syrup.” ~Buddy the Elf Somehow last year I was able to avoid fulfilling the oft repeated request until the Christmas season was over and Buddy the Elf’s strange eating habits were lost in the shuffle of the New Year. Liz’s rant: Electronics and the loss of innocence

I heard the results of a couple of studies the other day, which sent me on another of my rampages, wondering who the people are that dream up some of these studies. Seems like applying a little common sense would do the trick and save taxpayers a lot of money… but what do I know… The first study deals with hamsters on airplanes. Apparently jet lag is real, and it makes hamsters dumber. That’s right – hamsters were actually dumber after having flown and experienced the jet lag. Are the researchers saying the same applies to people? If so, why didn’t they research people in the first place? Moreover, does anyone really care?! Christmas Craftdown week 4: popcorn and tiers!

Here we are at week four of the 2010 craftdown – hard to believe! Hopefully, these two crafts will put a little jingle in your bells… This first craft is so simple, I almost feel guilty. Operative word being almost. I’d seen the idea somewhere – it required getting small wooden trays and blocks, painting them as desired, and assembling in the same fashion, ending up with tiered serving plates. Well, guess who couldn’t find the plain wooden trays and blocks… (that would be me). So I figured the same thing could be achieved with Dollar Tree plates and candlesticks. I was right. Kate’s Recipe of the week – White Chicken Chili

Nothing hits the spot on a cold December day better than a nice hot bowl of super easy and super delicious crock pot chili. This week I decided to mix it up a little bit and try something new…White Chicken Chili. It was a hit with the troops. Give it a try, your family will thank you. White Chicken Chili Ingredients: (for 8 servings) 3 15-oz. cans Great Northern Beans, drained 8 oz. cooked and shredded chicken breast 1 cup chopped onions 1 chopped red pepper 1 41/2-oz. can chopped green chilies (Oops! Left them out of the photo.) 3 1/2 cups chicken broth sour cream shredded cheese White Chicken Chili seasoning packet Directions: Combine all ingredients except sour cream and cheese in crock pot.
