Today, dear overworked I-don’t-even-have-time-to-think-so-how-am-I-supposed-to-find-time-to-cook readers, I present to you another Practically Painless Recipe…Super easy and Yummy Chicken and Dumplings. Super Easy and Yummy Chicken and Dumplings Ingredients 1 whole store-bought roasted chicken (about 2 pounds) 2 tablespoons vegetable oil 1/2   onion chopped 6 cans (14 ounces) low-sodium chicken broth 1 teaspoon poultry seasoning 1 teaspoon salt 1/2 teaspoon ground pepper 10 baby carrot sticks, chopped 2 celery sticks, chopped 1 tube  golden buttermilk biscuit dough 1 can (10.5 ounces) condensed chicken gravy Directions Remove skin from chicken and shred meat into large pieces. Set aside. In a small frying pan, add vegetable oil and heat over medium heat. When oil is hot, add chopped onions and saute until soft. There’s big doin’s here in the Bluegrass right now. After a multi-year countdown, evidenced by electronic countdown clocks splattered all over the county, the World Equestrian Games are under way. The games have never been held in the United States, so I guess the fact that little ol’ Lexington, KY was chosen to host this year is a pretty big deal. So when there’s a big event like this, people are prone to do other big things to celebrate. Take the life-size horse cake, for example. That’s right. By my estimation, we’ve got a pretty wimpy line-up of holidays this week, but I suspect most of you are still recuperating from last week’s line-up. So I guess a relative celebratory slow-down is probably in order, anyway. On Sept. 26, we have Walk Like a Zombie Day, or as my son would call it, Walk Like a Z-word Day. After more than five hours of walking, my feet were still happy campers in my EspaThrills!
