Recipe of the week – Chicken Pesto Club Sandwiches

It’s Thursday, so that means it’s once again cheater recipe time. So what’s a “Cheater” recipe? It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there. This week’s cheater recipe… Chicken Pesto Club Sandwiches Ingredients: (per sandwich) 2 slices cooked bacon (You can use the fully cooked kind. I prefer to cook up a few pieces of turkey bacon in the microwave.) 2 slices sourdough bread 1 tbs prepared pesto grilled chicken breast strips 1 slice cheddar cheese 2 tomato slices 1/2 cup fresh baby spinach (Oops! forgot the spinach in ingredients photo. ) 1/2 tbs olive oil ******************************************************************************************* Directions: Spread pesto on bread slices. We’re Under Construction!!

Yep, we’re under construction! And Kate warned you last week that she was coming here for a couple of weeks. So, I decided that since we were both here, with nothing but time on our hands (of course), that this would be THE perfect time to re-design the website. And to tell you the truth, we’ve been thinking about this for quite some time. Sure, we’ll be tweaking it as we go, which will include losing the background you currently see on the sides, AND those posts on the homepage marked “Popular”…well just ignore them, as they are OLD giveaways and just we can’t figure out how to get rid that whole section. Liz’s rant: When donkeys fly

Remember Florence Jean Castleberry – perhaps better known as Flo – from the series “Mel’s Diner”? She had many sayings she was fond of. One of the most popular was “when donkeys fly!” Clearly, she used this saying because she believed donkeys never would fly. Flo better find a new phrase. Because at least one donkey in Russia can now say he’s been flying. Much to his own dismay, I assure you. It’s Thursday, so that means it’s once again cheater recipe time.So what’s a “Cheater” recipe? It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there. This week’s cheater recipe… Restaurant Style Steak Fries Ingredients: 28 oz. bag of frozen steak fries 1/2 cup grated Parmesan cheese 2 tsp. Italian seasoning 1/2 tsp. salt Directions: 1.Pre-heat oven to 450 degrees. 2.Line baking sheet with foil. (Makes for easier clean-up). Bake steak fries (without the topping mixture) for 15 minutes. m m 3. Combine the cheese, seasoning and salt. m 4. Sprinkle over potatoes and mix gently. 5. You guys know how fond I am of bringing you weird things, lest we forget “You go, girl.” Not one to disappoint, I’m back with another product that I really should have seen coming. Alas I did not. Now before we get into this one, I would be remiss if I didn’t point out that there are several portable beverage products on the market. So the portable part isn’t new. But the implementation is. Recipe of the week – Stuffed Shells in a Snap

It’s Thursday, so that means it’s once again cheater recipe time. So what’s a “Cheater” recipe? It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there. This week’s cheater recipe… Stuffed Shells in a Snap m Ingredients: 1 pkg. jumbo pasta shells 1 jar spaghetti sauce frozen Italian meatballs 2 cups shredded cheese Directions: 1. Cook pasta according to package directions; drain carefully and rinse in cold water. 2. Place 1/2 cup sauce in greased 9×13 pan. 3. Place a meatball in each shell and put in pan. Top with remaining sauce and sprinkle with cheese. 4. Cover and bake at 350 for 35 minutes. Uncover and bake 5-10 minutes until bubbly. That’s right folks, MJ – the King of Pop – the singer that put the B in Bad – seems to have surfaced in the most unlikely of places – at a Fourth of July celebration barely more than a week ago.
