Recipe of the Week – Breakfast Casserole Muffins

Here we are at Thursday again, meaning it’s about that time – time for a cheater recipe. You probably know you’re in for super easy this week, with Kate on vacation. If I’m supplying the recipe, how hard can it be? So what’s a “Cheater” recipe? It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there. This week’s cheater recipe… Breakfast Casserole Muffins This recipe was given to me by the wife of a co-worker, and has become one of our favorite breakfasts. While we love traditional breakfast casserole, this one is much quicker, and need not be made a day ahead like the traditional version. Perfect for on-the-go or a leisurely morning, you can’t go wrong with this one! Ingredients: 6-8 … Read entire article »

Liz’s rant: Headliners

For purposes of yucks and grins and perhaps a belly laugh or two, I thought we’d explore some of the funniest headlines to ever grace the world of newspapers. I doubt I’ll be able to resist adding a comment or two, as the mood hits me. So let’s jump right in with this budgetary sweep of genuis: County to spend $250,000 to advertise lack of funds And to think they’re in charge of your county. Might I suggest someone confiscate their checkbook… Volunteers to search for old Civil War airplanes Let’s see… The Civil War was fought in the 1860s, right? And the Wright brothers first flew when?!?! Army vehicle disappears OK, perhaps I should explain. It had been painted with camouflage… Caskets found as workers demolish mausoleum Who could’ve seen that coming? Waterford boy, 8, saves sister’s life Granted, that … Read entire article »

Kate’s Escapades – “On the news, a family dies”

“On the news, a family dies…” That is an actual quote from my then 7-year-old son during a vacation in Arizona.   It’s one of my favorite quotes from my family’s vacation quote book.  Yep, we actually collect random and ridiculous vacation quotes taken completely out of  context,  just because we say so many dumb things  while traveling together.  Reading through them helps us remember fun times and makes us  laugh at ourselves. Here’s the story of “On the news, a family dies…” Two years ago we took our whole family (9 of us all together – 7 kids, 2 adults) to Bison Ranch, Arizona for vacation.  One afternoon we drove to a nearby mountain to go on a hike to a beautiful vista that promised us an amazing view.  It was hot … Read entire article »

Liz’s rant: Celebrating the 4th… on the 3rd…

Let’s just get this all out in the open, in case there are any questions. The 4th of July is easily my second very most favorite holiday of the year (just behind Christmas). There is no doubt in my mind that the United States of America is an exceptional nation. And I find that to be a huge reason to celebrate. Not because we’re better than the rest of the world – just the exception, not the rule. Because for 234 years, we’ve been that last bastion of freedom, embracing that we are endowed by our creator with certain unalienable rights – that among them are life, liberty and the pursuit of happiness. Try finding that philosophy and the other tenants on which we were founded in Cuba or Italy … Read entire article »

Get your party on: 6/27-7/3

Let’s start the week off with what I consider a real doozy of a holiday on June 27: Decide To Be Married Day. What exactly does this mean? Does it mean if you’re single, you can decide to be married, and, poof, you are? Does it mean if you are already married, and experiencing a bit of turbulence that you make a conscious choice to stay married anyway and wallow in your misery? I suppose it can mean whatever you want it to mean, and am guessing it’s a good thing Decide To Be Single doesn’t land on this day as well… Moving right along, remember when Take Your Children To Work Day was in its height of popularity? Okay, it wasn’t really a high height – more like a molehill. … Read entire article »

Liz’s rant: Cliques, bullies and bffs

I’m betting that some of you wish I’d quit reading – or at least ranting – about some of the things I find bizarre, strange or downright stupid. Hold on to those fantasies because it’s not about to happen. After all, what fun would I be then? (It was a rhetorical question for all you who’d like to answer…) Plus which, there are things we simply need to know. Like the fact that there is a huge push to discourage friends from having a best friend – a bff – a confidante and companion – through childhood. As most of us know, those bffs are not only a cornerstone of growing up, but an integral and sometimes get-me-through-this-day part of adulthood as well. Which is why a recent story in The New … Read entire article »

Liz’s rant: Garden rivals

As I’ve mentioned previously, I’m once again attempting to grow my own garden for a variety of reasons, not the least of which is that of self-sufficiency.  But it would appear that that there are those in my family who insist on mocking my efforts, making light of what I consider a serious endeavor. Case in point: the other day, I informed my parents that I’d planted some white half-runner green beans – a statement that was received by hearty (not to mention insensitive) laughter. “How funny,” they’d both said. “You mean white half-runner bean -singular?” Needless to say, it was with great one-upsmanship that I sent my dad a photo of the beans soon after they’d sprouted. “Who’s laughing, now?” I’d texted. At that point, I’d decided this was no ordinary garden I was … Read entire article »
