Kate’s Escapades: Watermelon De-seeding 101

When I was at the store recently, the price of a seedless watermelon was 59 cents per pound and the price of a seeded watermelon was 19 cents a pound…a 40 cent per pound difference! In my never ceasing effort to make life in the kitchen easier for you (and me)…here is my quick and easy step by step method of turning  a seeded watermelon into a delicious SEEDLESS snack for you and your family.    Step 1.  Wash the outside of your melon                     Step 2.  Cut off both ends           Step 3.  Score into the melon by cutting about halfway to the center all the way around.                     Step 4.  Pound firmly up & down a slice to loosen it, then pull out gently.   The slice should break apart at the seed line.   Step 5.  Cut the … Read entire article »

As you probably know by now, I babysit my neighbor’s terror cat whenever he’s out of town. Of course, he chose this weekend to head out, leaving the kids and I to deal with the little fur ball with beady red eyes. To make matters worse, I discovered that May 30 is Hug Your Cat Day. As the cat’s caregiver – albeit temporary – I feel I would be remiss if I wasn’t nice to the cat today. So yeah, I guess I’ll suck it up and be nice. Maybe even give the cat a hug. Recipe of the week – Cheesy Salsa Rice

It’s Thursday, so that means it’s once again cheater recipe time. So what’s a “Cheater” recipe? It’s a way to end up with a delicious home cooked meal, side dish or dessert without spending lots of time to get there. This week’s cheater recipe… Cheesy Salsa Rice This side dish is so easy and so delicious. It’s a snap to make, and is great along side some tacos or burritos. m Cheesy Salsa Rice Ingredients: 1 1/2 cups water 1 1/2 cups chunky salsa 2 cups uncooked instant rice 1/1/2 cups shredded Cheddar – Jack cheese Directions: In a sauce pan, bring salsa and water to a boil. Liz’s rant: Summer of mediocracy

At the risk of going on a rant that is better served in the political arena, I feel I must address the disaster in the Gulf of Mexico – a disaster now more than a month old – that originated with the explosion of the Deepwater Horizon drilling rig. While there are a multitude of directions I could take on this, it’s the seeming non-existence of good ol’ American ingenuity that bothers me the most. I read somewhere that neither BP nor the government were prepared for an oil spill of this magnitude. That statement really stopped me in my tracks. The new season of The Bachelorette started Monday night (May 24,2101) with new bachelorette, Ali Fedotowsky meeting her 25 eligible bachelors. Kate’s Escapades – The Great Bachelorette Debate

I am having a great debate within myself.  The intellectual, grown-up side of me (quit laughing, Liz) is telling me to be strong and resist temptation.  The frivolous, immature side of me is telling to just give in. It’s just once a week. What will it hurt, after all? What is the cause of this worrisome dilemma? Well, it’s the start of a new season of The Bachelorette, of course. I know. I know. Liz’s rant: The silly, crazy, goofy bands

Do you ever look at a product and think, “I could’ve thought of that!” A product so simple – and let’s face it, so useless – that its popularity defies all logic… Unless you’re a kid, I guess. And, of course, unless you’re the product’s maker (in which case, you’re a gazillionaire at this point.) What am I talking about? Silly Bandz. I think they’ve been a staple in our household for a couple of months, now. And if you haven’t heard about them yet, give it time. Get your party on: 5/23-5/29

I must say that I’m terribly dismayed with the celebratory offerings this week. Not that there aren’t holidays – just none that float my boat. None I can sink my teeth into and have some fun with.  This week’s holidays are nothing short of total yawners. So I’m taking the week off. Why bore you with a bunch of holidays that don’t inspire a party atmosphere and leave you, well, let down. I did decide to make up my own holiday, and I’d encourage you to follow suit. Wednesday, May 26 was originally the last day of school for the kids. Lost 6.16  “What They Died For” recap by Evie I am so glad we have technology that allows us to rewatch our favorite TV shows the next day. I can’t even remember what Jacob said they died for, which is the title of this episode. It starts off with Jack waking up in his bed and going to the bathroom mirror where he sees his neck is bleeding. I’ve already lost track of how long it’s been since they landed at LAX but I’m going to assume this is the same cut on his neck that he noticed he had on the plane. Liz’s rant: Dirtbag of the year?

Just when I think I’ve heard it all, it never fails. I hear something else. Something that defies all notions of decency, while bordering on unbelievable. Something that leaves you scratching your head, wondering where these people come from and how they’ve survived on planet earth as long as they have. Enter today’s rant, somewhere in Massachusetts, where a man allegedly offered to swap his 3-month-old daughter for beer. Or maybe it was crack cocaine. Police can’t be entirely certain at this point. Apparently, this dad of the year if you live on “Planet All the World’s an Idiot” had left his motel room/home with his girlfriend and daughter to visit the convenience store next door, where he approached the gas station’s maintenance man. This past weekend my daughters made some homemade lollipops for a get-together with some friends. Being treated to a delicious watermelon flavored sample made me remember how easy and yummy these suckers are. So I decided to share this with you.
