Recipe of the week – Cheater Chicken Casserole

TGIF, dear readers! Liz here. Please try to overlook the fact that I’m in the kitchen, because I know that can be a frightful thought. Nevertheless, I thought I’d share this super easy recipe with you. It’s almost the equivalent of chicken soup – comfort food at its best, in my opinion. That said, I present: Cheater Chicken Casserole Ingredients: Pre-cooked chicken strips (check the package for number of servings – I typically buy one two-serving package because Colton is not adventurous when it comes to eating) 1 package frozen broccoli Velveeta cheese to taste A couple dabs of butter Butter cracker crumbs (Ritz, Club Crackers, etc – even saltines will work) Directions: Zap the broccoli in the microwave for 3-5 minutes to begin the cooking process. Liz’s rant: When it’s just one of those days…

Ever notice how some mornings are just tougher than others to navigate through? You know – mornings when your 8-year-old announces that he forgot to mention part of his homework 15 minutes before you have to leave for school? I find it’s usually something as simple as that, that can set an entire day’s tone if I’m not careful. This morning held true to form. What began with a forgotten word search (crumbled up in the bottom of the backpack, mind you) continued with the realization that I’d forgotten to put the load of jeans in the dryer the night before. I’ve been putting it off for over a week now. Procrastinating. Justifying. Ignoring. Avoiding. What is this thing that is so dreaded that I am putting so much energy into NOT doing it? Liz’s rant: All the world’s a psychic

I typically sort through several hundred emails each day, and I’ve gotten pretty good at prioritizing them – knowing which ones I can mark to read later, which ones need immediate attention, and which can simply be deleted without a second glance. While my mail server is generally pretty good at weeding out junk mail, I still look in that folder too. Just like humans, computers screw up too (one man’s junk is another man’s treasure, if you will). For the most part, the junk mail is fairly typical, usually involving promises of body enhancements, heehee. I was sitting in the car the other day outside the school, thumbing through a magazine while I waited for the kids to get out.  I always try to get to the school early so I can get a prime pick-up spot (parents, you know what I’m talking about here), which leaves me about 10 minutes to kill every afternoon.
