What’s for dinner this week? Eggs, eggs and more eggs!

Here are some ideas that will hopefully help you use up those cartons of beautifully dyed,hard boiled eggs that are lurking on your fridge shelf… Breakfast Burritos – Just chop up some hard boiled eggs and mix with some cooked spanish rice and some grated cheese. Wrap it up in a tortilla.  Heat  in the microwave and top with salsa. BLT & E Sandwiches – Just add some sliced hard boiled eggs to the traditional BLT for a yummy twist. My dad and I stood in the garden section of Home Depot a few days ago, evaluating the power tools. I needed a lawn mower in quick order. And I needed one with power. No way was I going to borrow my brother’s grass cutter for another season. OK, so I didn’t use it for the whole season last year – just once. Which was more than enough for this chick. I must first take offense that he didn’t offer to mow my yard for me. He’s a healthy 30-something, not to mention my younger brother. Nevertheless the offer never came. Cast: Miley Cyrus, Billy Ray Cyrus, Vanessa Williams Also music from Rascal Flatts and Taylor Swift Tween flick/musical:  This movie is exactly what you expect it to be.  Set to appeal to the tv series fans, it’s a extended, somewhat better version of a weekly episode.  With better acting here by Miley Cyrus, I might add.  The story starts when Miley Steward/ Hannah Montana gets a little too big for her britches and her on screen/real life dad takes her back to her hometown in Tennessee to get back to her roots.  The story wouldn’t be complete without a teenage love story and not one, but two, villains set to destroy the home town and ruin Miley’s life. So it wasn’t a real boat, but “the” boat, as in we almost missed the boat. Since Colton was old enough to walk, he’s carried a hockey stick. Watched hockey movies. Pretended he was a hockey player. My dilemma was two-fold: no ice rinks with hockey programs for toddlers, and no money for which to pay the astronomical ice rink dues even if such a program existed. More Fun Easter Egg Coloring Ideas Marbled Eggs When you are almost finished dyeing eggs, try this with the last few eggs.  Simply add 1 TBS of oil to the cup of dye.  Stir quickly with a spoon and drop in egg.  Pull egg out quickly and pat dry. Here’s what’s for dinner this week at my house. I’ve discovered after talking with Liz and other friends of mine – one of the hardest things about fixing dinner each week is deciding what to make .  In an effort to help Liz (and anyone else who’s interested) I’m going to share with you what we’re having for dinner at my house  this week… Tonight we’re having  – Teriyaki chicken bowls, rolls and fortune cookies. Perfect Hard Boiled Eggs I’ve been on a quest over the past few days to find out how to make the “Perfect Hard Boiled Egg” since Easter is coming up on Sunday.  At my house, dyeing  eggs on the Saturday before Easter is a tradition.  We’re not talking a couple eggs here…we’re talking 5 (yep, that’s FIVE) dozen eggs. I know that sounds ridiculous, but that’s only 8 eggs per kid, with a few extra to account for the eggs that inevitably crack while boiling. With this easy and fail-proof method for hard boiled eggs, the whites will be firm, but not rubbery, and the yolk will be yellow (not grayish – a sign of over cooking) with just the slightest hint of a shiny center.
